Deep-Fryed Turkey: The BEST!

Alton Brown sure seems to know his stuff!

I first encountered this style of turkey preparation when living in Baton Rouge between '84 and '94. Even then, down there, iirc, they referred to it as "Cajun" style. The trick is injecting the bird with deep pockets of flavoring that perfuse the meat as it cooks...

It's done when it floats atop the boiling oil.
